Instant noodles were invented by Taiwanese-Japanese inventor Momofuku Ando in Japan. It was first marketed on 25 August 1958 by Ando's company, Nissin, under the brand name Chikin Ramen.[3] Ando developed the production method of flash frying noodles after they had been made, creating the "instant" noodle. This dried the noodles and gave them a longer shelf life, even exceeding that of frozen noodles. Each noodle block was pre-seasoned and sold for 35 yen. Initially, due to its price and novelty, Chikin Ramen was considered a luxury item, as Japanese grocery stores typically sold fresh noodles for one-sixth their price.[4][5] Despite this, instant noodles eventually gained immense popularity, especially after being promoted by Mitsubishi Corporation.[6]
速食麵，又稱快熟麵、方便麵、即食麵、泡麵、快速麵、快餐麵，是一種可在短時間之內煮熟食用的麵製食品。即食麵的原理是利用棕櫚油將已煮熟與調味的麵條硬化，並壓製成塊狀，食用前以熱水沖泡，用熱水溶解棕櫚油，並將麵條加熱泡軟，數分鐘內便可食用。
成為速食產品的近代速食麵，是由1958年日籍台灣人安藤百福（原名「吳百福」）有鑒於當時吃一碗麵要排隊排很長，所以在大阪府池田市發明的[1]。安藤百福並在發明速食麵後，創立日清食品公司，販售「雞湯拉麵」（チキンラーメン，在香港名為「日清伊麵」；中國大陸為「日清始祖雞湯拉麵」）口味。最初的售價為35日圓，但仿製產品隨即出現，導致產生削價競爭。
日清公司在發明速食麵後，便積極向國外發展。1963年先與韓國三養食品合作，1968年再與台灣的國際食品公司合作推出雞湯口味的生力麵。最初的生力麵因為沿用日本配方，在台灣銷路並不好。在調整過調味與麵條的口感之後，成為台灣的暢銷產品，顧客多半買回家當宵夜食用，或者是加蛋煮食。曾有一段時期，「生力麵」曾在台灣幾乎成為這類產品的代名詞。然而由於經營不善，生力麵最後黯然退出市場。截至2005年，過去的國際食品公司僅剩一家生力麵店在高雄市新興區繼續營業，但早已退出速食麵市場。
雖然速食麵在亞洲頗受好評，1960年代末期在美國卻無法順利打開市場。因為一般美國人沒有燒開水的習慣，而且家中的餐具也以餐盤為主。為了讓不習慣用碗的民族消費速食麵，日清公司發明以發泡聚苯乙烯為容器的杯麵，於1971年在日本上市，售價為100日圓（0.4美元），為當時袋裝速食麵售價的三倍以上。而韓國農心企業引入日本杯麵銷售失利後，則推出碗型包裝的家庭裝速食麵，成功於韓國民眾間營造「非日本文化」產品形象。[2]
在現代的盒裝速食麵發明之前，在清代已經出現了與之類似的油炸麵條，這種麵條被稱為伊麵，而非油炸的麵條則可以追溯公元前205年韓信軍隊發明的踅麵。
